As soon as I read "chipped ham" I knew you had to be from the Pittsburgh area! I miss Isaly's, too! My mouth was watering just thinking about how yummy the sandwich would taste.

We love, love, love pizzelles, too! I think I had the same iron, I know my recipe book is the same as the one you pictures. My iron finally croaked - it only lasted since the early 70's :shock:

What is chipped ham and what can I use instead of the Isaly's ham you speak of? Thank you for any info. Recipe sounds interesting and I want to try it.

I found this definition for "chipped ham" on Allrecipes...you can click on the photo to get an idea of what the meat looks like...

"What is chipped ham??? Yunz gotta be a 'Burgher to know that chipped ham is shaved ham. Any kind of deli baked ham can be used, cut very thinly or shaved. In Pittsburgh, it is "chipped". An early version of this dish used a local brand, Isaly's Chipped Chopped Ham, a rather greasy but tasty composite loaf. One of those things you really didn't want to know what the contents really were."

You could ask the person at the deli counter to "shave" the baked ham. The meat isn't a full slice, it ends up being small randomly shaped thin pieces. The small pieces make the meat easy to arrange on a bun.

Oh I am so glad you non-Pittsburgers are trying these great sandwiches!

And Nece, so you are a Texan now? Did you grow up in Pittsburgh? We actually bought a new pizzelle iron but we still use the original that we got back in the early 70's. And nothing matches the recipe from the original one.

I'm a Texan now - a "Steelers" Fan living in "Cowboy" country. I moved to Houston in the late 70's, so I spent over half of my life in Texas. Several years ago we relocated to the DFW area. All of my family lives around Pittsburgh. In fact, we just went "home" last weekend and had a celebration for my parent's 60th wedding anniversary.

My parents bought pizzelles from Labriola's Italian Market. They were wonderful - full of the anise flavor. Not a bad price, $3.99 and I think there was a dozen in the container. That's very inexpensive compared to what they sell for in Texas - if you can find them!

Chipped anything is very Pennsylvania isn't it? I grew up eating creamed chipped beef and also my mother made it with hamburger. And then I moved south and we threw sausage in our cream gravy-but you can't beat ham or beef!
Same with Sweet Lebanon bologna.

It will be a while before I have any gathering but I love to collect recipes that can be made ahead. On an aside, my mother was from Vermont and she loved to cook creamed chipped beef. It came in a little glass jar with the lid that kind of popped off. She also looooved Lebanon bologna and black walnuts.

CajunQuilter - yep you rarely see Lebanon Bologna outside of PA either.
