This is easy, fast, and delicious.....so thought I'd pass it along. This is the site this came from, she has some really good recipes.

http://www.plainchicken.com/?m=0

Loaded Potato Casserole aka Crack Potatoes

2 (16oz) containers sour cream
2 cups cheddar cheese, shredded
2 (3oz) bags real bacon bits
2 packages Ranch Dip mix (not the dressing mix)
1 large (28 - 30oz) bag frozen hash brown potatoes - shredded kind

Combine first 4 ingredients, mix in hash browns. Spread into a 9x13 pan. Bake at 400 for 45-60 minutes.

Those sound soooo delicious. It's only my husband & I now. I'll have to have the kids come over to try it out.

This is almost identical to a potato recipe we make in camp ovens. Those who don't know, these are large heavy castiron dutch ovens that we use when camping. Some people call them 'spiders' because they stand up on three legs over the hot coals. You then put hot coals on top of the lid, and it bakes the food, hence the Camp Oven name. The only thing different is the Ranch dip flavoring. Have got to try adding that !!! Thank you....
