Bread pudding is my husband favorite dessert, and since as a child it's one thing he's wanted for his birthday. Here's a slightly different recipe from the usual bread pudding. My husband gave rave reviews and he won't do that if he doesn't really like it.
Chocolate-Chocolate Bread Pudding
1-1/2 c. milk
2-1ou. squares of unsweetened chocolate
3/4c sugar
1tsp ground cinnamom
1/2tsp ground nutmeg
3 c day-old bread cubes
1/2 c chopped walnuts
3 eggs, beaten
1 tsp vanilla extract
1/2 c semi-sweet chocolate chips/chunks
1 oven roasting bag( one of the plastic bags)
Directions: preheat oven 350dgs F(175dgs C) In a double boiler heat together the milk and chocolate squares til the chocolate melts. Make sure to take the time to do this, if the milk(even heated) is added to melted chocolate it will make the chocolate seize up and be very hard to stir smoothly. Mix in bread cubes
Beat together the eggs, sugar, spices, vanilla extract and nuts. Temper eggs with a small amt of warm milk/chocolate mixture, stirring till blended then add the rest of the warm milk/chocolate mixture, stirring again. Add the 1/2 c semi-sweet chocolate pieces to the mixture
Place bag in a 1qt casserole dish or loaf pan; pour chocolate/bread mixture into the bag. Close bag with tie provided; make 6-1/2" slits at the top edge of the bag, just below the tie. Pour water into pan so that water comes up over the edges of the bag but not overflowing.
Bake 50-60 mins. To serve, remove from pan, cut away the bag from the top and place pudding on plate.

I did something slightly different, I put the chocolate mixture in a greased 1-1/2 qt. casserole. Then using a turkey size cooking bag(its the only size bag I had) with a tbl of flour in the bag and the bag was shook to coat the bag(that's something that the bag manufacturer suggests); then placed the casserole dish in the bag, then tied and slit as above. I placed the plastic cooking bag with casserole, inside a disposable aluminium baking pan. The plastic bags are not supposed to touch hot metal like metal oven racks, that is why I placed the dish in the aluminium baking pan. Did not use the water.
Everything worked out fine and the pudding has its normal custard-like consistancy along with bits of melted semi-sweet chocolate.

I have one happy husband. His birthday was Wed and I was sick so he got his "cake" tonight! Chris

Hi! Hope you enjoy it as much as DH did, he told me that the recipe was a definite "keeper". He liked it as much as his normal bread pudding. That's quite a comment, the normal recipe was passed down to me from his mother when we were dating, almost 40 yrs ago! I wondered what my MIL would think!!! Chris
