I got this cookbook at a thrift store-a secret passion of mine-I love to look at cookbooks hence why my budget is under a dollar for them!

This is from Eater's Choice by Dr Ron and Nancy Goor. This is the basic recipe but I changed it up a bit after eating it the first time I found it a little dry but I found this a good base recipe to play with.
I have cut the oil in half and substituted pear baby food one of those little plastic containers I think about 2 oz. I cut up apples and added spices and raisins and a tsp of applejuice, zapped it in the Microwave for two minutes and then put it in the center of the cake like you would a streusel filling.
I used agave syrup, honey instead of all the white sugar.
I also added vanilla and spices to the cake batter itself - I used apple pie spice for the apple filling.
I baked it once without the topping and used a little bit of confectioner sugar icing and put crushed pecans on it.
I LOVED the topping. It only used one Tbsp of Butter and it was as good as any streusel I ever made with more butter.
Safeway had peaches for 69cents a lb yesterday so I am going to try peach cake with this today or tomorrow.

Cinnamon Sweet Cakes

1/4 cup olive oil
1 egg
1/2 cup skin milk -I used 1% which is what we drink and depending on if you use applesauce or something moist in it cut this back a Tbsp or so
1/2 cup sugar
1/2 cup whole wheat flour
1/2 cup unbleached white flour
2 tsp baking powder
1/2 tsp salt - I always reduce this in half in any recipe and use the iodized or sea salt
Combine wet ingedients first then add dry

Topping

1/2 cup brown sugar (I used about half of this amount and I think I used cane sugar once)
1/2 cup chopped walnuts - I used hazlenuts once and pecans
1 Tbsp unbleached white flour
1 Tbsp melted margarine - I use butter if I am eating it I am eating the good tasting stuff!
1 tsp cinnamon
Combine everything, mix in margarine and sprinkle over batter.

Bake 375 in greased 8x8 pan ( I used a pottery dish and cut back to 350) for about 25 minutes.
