 Post subject: Toasted Pecan Pudding

A friend shared this recipe with me over the holidays...I loved it. Very simple.
I love recipes using pudding and coolwhip. Any good ones out there?


Toasted Pecan Pudding

½ cup butter, melted
1 ½ cups flaked coconut
1 cup all- purpose flour
1 cup chopped pecans
¼ cup brown sugar
2 packages instant vanilla pudding
3 cups cold milk
1 container cool-whip

Method:
Combine butter, coconut, flour, pecans, and brown sugar. Stir until mixed well. Spread mixture into a baking pan and bake at 325 degrees for 30 minutes.

In a mixing bowl beat pudding mix and milk. Chill for 5 minutes. Fold in cool-whip.
Place half of the pecan mixture in a dish. Top with pudding mixture. Then place remaining mixture on top of pudding.
Chill for 1 hour
